What is better on a cold, winter day than a warm and comforting bowl of soup? How about a bowl of soup that is not only that, but is also loaded with vitamin A, vitamin C, iron and fiber? This soup is loaded with all that nutritional goodness. The slightly sweet and spicy flavor leaves your taste buds feeling satisfied and the 8 grams of fiber per bowl leaves your stomach feeling full. Carrot Potato Ginger Soup
2 tbsp.olive oil
@ 1/4 of a celeriac (celery root), peeled and chopped
1 bunch of scallions, chop and keep the green parts only (or use leek leaves instead)
10 medium carrots, peeled and sliced into rounds
6 medium potatoes, peeled and chopped into cubes
2 medium yams, peeled and chopped into cubes
2 tbsp. ginger root, peeled and finely grated
1 tbsp. olive oil
8 c. water
1 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. ground nutmeg
1 c. unsweetened almond milk
1 tbsp. extra virgin olive oil
To a large pot, heat the olive oil slightly. Add the celeriac and scallions and sauté.
Add the carrots, potatoes, yam, ginger, water, salt, pepper and nutmeg. Bring to a boil, then reduce the heat to low and simmer for 20 minutes or until the large vegetables are softened. During the last 5 minutes of cooking, stir in the almond milk and extra virgin olive oil. The almond milk and extra virgin olive oil add a little creaminess to round out the flavor of the soup.
The soup can be served as is for a more rustic look or it can be puréed in a food processor or blended for a smooth and creamy soup. Don't overload your blender or food processor, just fill it about halfway full. You don't want to spray yourself with very hot soup when you turn it on! So just fill the blender or food processor up about halfway and make sure that your top is completely on. You could even cover the top with a kitchen towel, just in case some soup tries to fly out while you're blending.
