Last month my family finally got a chance to get away from the busyness and spend time together, away from it all. We headed to my in-laws' cabin in the mountains in Tioga County, Pennsylvania. At the cabin there is no tv, no internet, and only spotty phone service. We spent the weekend playing games, hiking through the fall foliage, swinging on a tree swing, riding the four-wheeler, warming up by the wood stove, and eating delicious food.
One of the food items we packed was the Gluten-Free Naturals Pancake Mix. We had first tried this pancake mix a little while ago after Golden Barrl gave me a pack and asked me to try it and give them my opinion of the product. At the time that we first tried this product we had a lot going on and I was unable to find the time or energy to write. In addition to the craziness of getting back into the swing of the kids going back to school, going back to school myself, plus full time jobs and other responsibilities, we were facing the health decline of our beloved 13 year old Laborador, Maverick. He used to love going to the mountains!! He traveled very well on the long trip there. As soon as we hit the dirt road, he knew we were almost there and he would begin whining excitedly and pacing in his travel crate.
There was a lot going on that had me in a place mentally where I just felt like I couldn't write. However we did try the pancake mix one weekend morning when we were all tired and hungry for something tasty. I was busy working on my statistics class so my husband actually was the first one to try this mix. We really enjoyed the result of this mix and the ease at which it was to make. So when we were planning our mountain trip, I knew we had to bring along the Gluten-Free Naturals Pancake Mix. I had not noticed it in the store I shop in but luckily Amazon sells it so I ordered a box that way. I added it to my Amazon store here.

This pancake mix was a big hit with the whole family. My husband and I both like how easy the mix was to make. To make pancakes with the Gluten-Free Naturals Pancake mix, it calls for adding 1 cup of milk, 1 egg, 1 tablespoon of cooking oil and 1/2 cup of water, adjusting the water to the desired consistency. We used 1 cup of unsweetened almond milk, 1 egg, 1 tablespoon of olive oil and 1/2 cup of water and the pancakes turned out great! They were light and fluffy. They had a beautiful golden color and they rose nicely.
The mix has corn flour in it as one of the nonwheat flours they use. This makes the flavor of this mix stand out from the other gluten free pancake mixes that we have tasted. There is a slight corn taste to the pancakes that I noted. Some people may like this slight flavor of corn, others may not. My husband and children did not even notice it. They thought that these pancakes tasted the most like non-glutenfree pancakes, like they had in a restaurant on vacation recently.
I like that the mix can be adjusted to make waffles too. And that the mix is so quick and easy to prepare. They were the perfect addition to our mountain trip! I have bought a few more bags of this mix to keep on hand when we need something quick and tasty for breakfast.
This is a delicious gluten free option that I knew nothing about until the company offered me a bag to taste and review. I think that they have a successful product on their hands that would be a welcome addition to the other gluten free breakfast options by the gluten free community.
A word of advice to the company. Had I not been personally guaranteed by the company that this product was manufactured free from any possible gluten cross-contamination, I would have passed on purchasing this product in the store due to the lack of information about this on the label. I would suggest adding a guarantee on the packaging that the product is gluten free. I would also suggest adding some information to the label about how the company takes the issue of cross-contamination serious. Add those two items to the label, get the word out about this product and I believe that you will have a successful product on your hands.
