April showers bring May flowers, right?? That's what I've been reminding myself of all day. It's another cold, dreary and rainy April day here in Pennsylvania. So to counteract all of that rain and dreariness, I made us Oatmeal Raisin cookies. There's just something about the flavor of the oatmeal with the cinnamon and raisins that I find to be so warming and comforting. To make these cookies even better, I reduced the butter and eggs by half and I added whole wheat flour and applesauce. The applesauce works really well with the rest of the ingredients to make a tasty and moist cookie. There are also two variations to this recipe that I make depending on what kind of cookie we are craving. The result of this versatile recipe is a tempting cookie has half the fat and cholesterol of a regular oatmeal cookie. Enjoy! Two variations to this cookie recipe:
Oatmeal Chocolate Chip Cookies-omit the raisins and add 1 cup of chocolate chips
Double Chocolate Oatmeal Cookies- omit the raisins and add 1/2 cup of cocoa powder and 1 cup of chocolate chips
Oatmeal Raisin Cookies
1/2 c. unsalted butter, softened
1/2 c. unsweetened natural applesauce
1 c. brown sugar
1/2 c. white sugar
1 tsp. vanilla
1 c. whole wheat flour
1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 c. oatmeal, old fashioned or quick
1 c. raisins
Preheat oven to 350°F.
In a large mixing bowl, cream together the butter, applesauce and sugar.
Add the egg and vanilla extract and beat until thoroughly combined. Add the whole wheat flour, all purpose flour, baking soda, cinnamon and salt; mix just until combined. Stir in the oatmeal and raisins.
Drop by tablespoonfuls onto an ungreased baking sheet. Bake for 8 minutes or until the edges of the cookies are golden brown. Let the cookies rest on the baking sheet for a minute, then remove from the baking sheets to cooling racks to finish cooling. Store completely cooled cookies in an airtight container.
